These breadfruit flour dumplings make a beautiful presentation when paired with guacamole or a bean dip. Simple and gluten-free.
Ingredients
Breadfruit flour 1 lb
Himalayan salt 1/4 tsp
Baking powder 1/2 tsp
Extra virgin olive oil 2 tbsp
Directions:
Whisk together first four ingredients. Add extra virgin olive oil (or other oil) using the rubbing method; cover and set aside.
In a frying pour 1/4 cup coconut oil allow to heat.
On a clean surface knead dough, rubbing gently with both hands until you get your desired length.
Fold like a horse shoe and place in hot oil. Remove from pot when you get your desired colour. Cooking time is roughly 3 minutes. (The cooking time is less because of the thinness of the dough.)
Place on paper towel to absorb extra oil. Cooking time 3minutes.
For the toppings (optional)
Crush 1/2 avocado and add 1tbsp fresh lemon juice, diced bell peppers, tomatoes, onions, Celtic salt, extra virgin olive oil, and spring onions.
Combine. Place on dumpling, add desired garnish, eat immediately.
