What's better than dumplings? Breadfruit dumplings!
Ingredients for dumplings:
Breadfruit Flour
Water
Directions:
Combine and mix until a slightly sticky dough is formed.
Form into large, flat "cartwheel" dumplings and add to a pot of boiling water
Run Dung Ingredients:
Milk of one dry coconut
Saltfish 1/4lb
5 Pimento seeds
1 large Onions
1 Tomato
Garlic 1 clove
Thyme 1 sprig
1 Scotch Bonnet Pepper
Directions:
Add coconut milk to a sauce pan and boil until reduced to a custard.
Add chopped tomatoes, minced garlic, diced onions, minced scotch bonnet pepper, pimento seeds, and a sprig of thyme to the custard of milk and stir.
Allow to simmer for 2 minutes and then add the flaked saltfish.
Continue to simmer on low for 3 minutes, stirring occasionally.
Serve with dumplings.
